\"2013-10-17_09-51-02\"<\/a>An so manchen Tagen tr\u00e4ume ich davon, ich k\u00f6nnte ganz, ganz normal Wein machen… Mit normal meine ich: in Ruhe einen bescheidenen Reifegrad abzuwarten, im Zweifelsfalle, besonders vor einer drohenden Schlechtwetterfront alles, ohne besonders viele Gedanken \u00fcber die Weinqualit\u00e4t zu verlieren, auch etwas fr\u00fcher abzuernten und gelassen dem Weinen bei der G\u00e4rung (solches Traubenmaterial ist im Keller wesentlich einfacher und sicherer) zuzuschauen, ein trinkbarer Wein wird schon daraus werden. Relaxorientiertes Weinmachen also.<\/p>\n

Sovente sogno di fare vino in modo molto, molto normale… Per normale intendo: aspettare con tranquillit\u00e0 un livello di maturazione medio-basso, nel dubbio, soprattutto se si annuncia una perturbazione, vendemmiare tutto anche prima, senza spendere un pensiero circa la qualit\u00e0 finale, accompagnare con calma la vinificazione (infatti partite di questo tipo sono pi\u00f9 facili da gestire in cantina) ed aspettare che diventi un vino bevibile. Un fare il vino relax insomma<\/em>.<\/em><\/p>\n

Aber nichts da, ich h\u00e4tte von Anfang an verloren: Wenn man ein relativer neuer Betrieb ist, ohne jeglicher Tradition, in einer schwierigen Zeit angefangen hat\u00a0\u2014 seit ich Wein verkaufe h\u00f6re (und sp\u00fcre) ich nur Krise und Rezession\u00a0\u2014 , nicht jede Mode mitmacht, auch nicht die segensreiche Hand eines wirklich bedeutenden Verteilers oder Importeurs \u00fcber sich sp\u00fcrt und wegen der geringen St\u00fcckzahlen auch teurer produziert, dann ist nichts mit einfach.<\/p>\n

No, niente di tutto ci\u00f2, avrei perso la gara gi\u00e0 in partenza: se si \u00e8 un’azienda relativamente giovane, senza alcuna tradizione, se si ha cominciato in un periodo difficile (infatti, da quando vendo vino non sento altro che crisi e recessione), se non si partecipa ad ogni moda, se non si sente la mano protettiva di un distributore ed importatore veramente importante sopra di s\u00e9 e se si \u00e8 abbastanza cari a causa elle poche bottiglie prodotte, allora il fare il vino facile non ci sta per niente.<\/em><\/p>\n

Das Qualit\u00e4tspotential, das vom Rebschnitt an mit sehr viel Handarbeitsstunden in den Trauben aufgebaut wurde, muss so vollst\u00e4ndig wie m\u00f6glich in den Keller gelangen, da darf nichts verschenkt werden. Und bei dem im meinem Betrieb bew\u00e4hrten Weintyp ist dies eben mit einer vollst\u00e4ndigen, deshalb sp\u00e4ten Reife verbunden. Damit sinken logischerweise die Chancen, alles immer sicher, gesund und trocken einzubringen. Immer wieder muss abgewogen und entschieden werden. Haben die Trauben die angestrebte technologische Reife\u00a0(und nicht physiologische, wie m.E. oft falsch gesagt wird) schon erreicht? Wie sicher ist die nahende Schlechtwetterfront? Halten die Trauben den\u00a0angek\u00fcndigten Regen aus? Wie kann ich ohne zu sehr auf Qualit\u00e4t zu verzichten, das Risiko streuen? Wie viele Tage muss ich nach Regenende warten, bis der vorige Zustand wieder hergestellt ist? Naht dann nicht vielleicht schon wieder eine Niederschlagsperiode? Habe ich gen\u00fcgend Leser, um das Sch\u00f6nwetterfenster zu nutzen? Soll ich mehrere Leseg\u00e4nge organisieren oder soll auf den Boden geschnitten werden? Und wenn alles zusammenkommt, welche Traubenpartie ist die wertvollste, welche die angeschlagenste und welche wird am ehesten noch halbwegs und bleiben?<\/p>\n

E per questo devo andare sempre al massimo. Il potenziale qualitativo che abbiamo accumulato nelle uve al prezzo di tante ore lavorative deve arrivare il pi\u00f9 possibilmente integro in cantina, non c’\u00e8 margine. E per la tipologia che caratterizza la nostra azienda ci\u00f2 vuol dire una maturazione spinta che comporta vendemmie ritardate. \u00c8 ovvio che ci\u00f2 diminuisce la probabilit\u00e0 di vendemmiare con sicurezza tutte le uve sane ed asciutte. Continuamente bisogna valutare e decidere. Hanno le uve gi\u00e0 la giusta maturazione tecnologica (e non fisiologica come spesso si sente dire, secondo me erroneamente)? Quanto \u00e8 sicuro che arrivi veramente la perturbazione annunciata? Reggeranno le uve la prossima pioggia? Come posso diminuire il rischio senza rinunciare troppo alla qualit\u00e0 voluta? Quanti giorni deve aspettare dopo le piogge perch\u00e9 venga ristabilita la concentrazione nelle uve di prima? Arrivano forse nel frattempo le prossime precipitazioni? Ho abbastanza vendemmiatori per sfruttare il poco bel tempo? \u00c8 meglio fare un secondo passaggio o solo uno tagliando per terra il guasto? E se la situazione precipita, quale partita \u00e8 la pi\u00f9 preziosa, quale la pi\u00f9 danneggiata e \u00a0qual’\u00e8 quella che resisterebbe ancora meglio?<\/em><\/p>\n

Dabei ist nat\u00fcrlich Wissen und noch mehr Erfahrung gefragt. Schlussendlich ist es aber fast immer nur ein Erraten (oder auch nicht). Erst im Nachhinein erf\u00e4hrt man, ob die Entscheidungen vermutlich die richtigen oder die falschen waren. Und im n\u00e4chsten Jahr wird sowieso alles anders… \u00dcbrigens, am 17. Oktober haben wir den Merlot f\u00fcr den Kretzer gelesen, ich h\u00e4tte noch gerne etwas gewartet, aber die Botrytis, auf gar einigen Trauen schon deutlich ersichtlich, hat uns keine andere Wahl gelassen. Am 20. knapp vor dem (wieder einmal!) Regen haben wir die zweite und letzte Gew\u00fcrztraminerpartie wie geplant gelesen, und am 22. werden wir uns, wieder vom Gesundheitszustand diktiert, dem Merlot f\u00fcr den Rotwein widmen.<\/p>\n

Naturalmente ci vogliono cognizioni ed ancora di pi\u00f9, esperienza. Alla fin fine per\u00f2 tutto si riduce all’indovinare (o meno). Solo alla fine si capir\u00e0 se si sono prese le decisioni giuste o errate. E naturalmente\u00a0nel prossimo anno sar\u00e0 tutto diverso… A proposito, il 17 ottobre abbiamo vendemmiato il Merlot per il rosato, la botrite incalzante non ci ha pi\u00f9 lasciato libert\u00e0 di scelta. Il 20 abbiamo finito il Gew\u00fcrztraminer giusto prima delle piogge ed il 22 ci occuperemo del Merlot destinato a vino rosso, anche qu\u00ec lo stato sanitario ci ha dettato la data.<\/em><\/p>\n","protected":false},"excerpt":{"rendered":"
