Innerhalb von zwei Tagen wurden mit Hilfe der mobilen Abf\u00fcllanlage\u00a0 unseres Maschinenringes (Bilder und Film vom vorigen Jahr sind <a title=\"weinhof KOBLER: F\u00fcllung (3) \u201cGeschafft!\u201d\" href=\"http:\/\/www.kobler-margreid.com\/blog\/2008\/05\/04\/fullung-3-geschafft\/\" target=\"_blank\">hier<\/a> zu sehen) alle Wei\u00df- und Ros\u00e9weine des Jahrgangs 08 und die Riserva-Qualit\u00e4t 07 &#8222;auf die Flasche gezogen&#8220;.<\/p>\n<p><em>Il 20 e 21 aprile erano destinati all&#8217;imbottigliamento annuale. Nel corso di due giorni sono stati messi in bottiglia con l&#8217;aiuto della linea di imbottigliamento mobile della cooperativa di macchinari (<a title=\"weinhof KOBLER: F\u00fcllung (3) \u201cGeschafft!\u201d\" href=\"http:\/\/www.kobler-margreid.com\/blog\/2008\/05\/04\/fullung-3-geschafft\/\" target=\"_blank\">qui<\/a> le immagini ed il filmino dell&#8217;anno scorso) tutti i vini bianchi e rosati dell&#8217;annata 2008 e la riserva del 2007.<\/em><\/p>\n<p><em><\/em><!--more--><\/p>\n<p>Was man im Bild sieht, ist das Innere des Rotweing\u00e4rtankes. Er wird nach dem Herbst nur mehr als Verschnitttank benutzt, da er mit seinen 4.000 Liter Fassungsverm\u00f6gen der gr\u00f6\u00dfte im Keller ist und auch wegen seines Schwimmdeckels f\u00fcr die F\u00fcllvorbereitung bestens geeignet ist. Was zur\u00fcckbleibt, sind ein letzter Weinrest und auch ein bi\u00dfchen Weinstein am Tankboden. Teile dieses Salzes aus Kalium und Weins\u00e4ure fallen immer, auch trotz vorheriger Stabilsierung mittels K\u00e4lte, nach der Filtration aus, da diese u.a. auch die Schutzkolloide um die Kristalle entfernt.<\/p>\n<p><em>Nella foto si vede l&#8217;interno del serbatoio per le vinificazioni in rosso. Dopo l&#8217;autunno viene usato solamente per i tagli in quanto per la sua capacit\u00e0 di 4.000 litri \u00e8 il pi\u00f9 grande <\/em><em>serbatoio in cantina e perch\u00e8 il coperchio galleggiante lo predispone per le operazioni di preimbottigliamento. Quello che <\/em><em> <\/em><em>rimane <\/em><em>sul fondo <\/em><em>sono resti di vino e un po&#8216; di tartrato. Parte di questo sale precipata sempre dopo la filtrazione nonostante la stabilizzazione precedente a freddo, in quanto il passaggio attraverso un filtro priva i cristalli dei colloidi protettori.<br \/>\n<\/em><\/p>\n<p>Die erlaubte <a title=\"Download: G\u00f6rtges, S.: Metaweins\u00e4ure zur Weinsteinstabilisierung\" href=\"http:\/\/www.db-acw.admin.ch\/pubs\/wa_oen_02_pub_421_d.pdf\">Metaweins\u00e4ure<\/a> zur Verhinderung eines sp\u00e4teren Ausfalls in der Flasche wird von mir nicht verwendet. Nicht, dass ich sie f\u00fcr der Qualit\u00e4t des Weines abtr\u00e4glich halte, aber erstens ist die Wirksamkeit zeitlich begrenzt und zweitens ist sie nicht im Sinne einer minimalistischen \u00d6nologie, wie ich sie betreibe. Zudem hoffe ich, dass der gebildete Weintrinker kein Problem mit im schlimmsten Fall ein paar Kristallen am Flaschenboden haben wird.<\/p>\n<p><em>Non utlizzo l&#8216;<a title=\"Download: Scheda tecnica acido metatartarico\" href=\"http:\/\/www.tecnofood.it\/schede\/materie%20prime\/metatart_.pdf\">acido metatartarico<\/a> che \u00e8 consentito dalla legge per evitare le precipitazioni tartariche in bottiglia. Non perch\u00e8 lo considero svantaggioso per la qualit\u00e0 del vino, ma perch\u00e8 la sua efficia \u00e8 limitata nel tempo e perch\u00e8 \u00e8 poco compatibile con il concetto di enologia minimalista che pratico. Inolte spero che per il bevitore esperto qualche eventuale deposito cristallino non sia un vero problema.<\/em><\/p>\n<p><a href=\"http:\/\/www.kobler-margreid.com\/blog\/wp-content\/2009\/04\/2009-04-22_13-35-49.jpg\" rel=\"lightbox[1781]\"><img loading=\"lazy\" decoding=\"async\" class=\"float left alignleft size-full wp-image-1787\" style=\"border: 0pt none; margin: 0px 5px;\" title=\"2009-04-22_13-35-49\" src=\"http:\/\/www.kobler-margreid.com\/blog\/wp-content\/2009\/04\/2009-04-22_13-35-49.jpg\" alt=\"2009-04-22_13-35-49\" width=\"266\" height=\"354\" srcset=\"https:\/\/www.kobler-margreid.com\/blog\/wp-content\/2009\/04\/2009-04-22_13-35-49.jpg 768w, https:\/\/www.kobler-margreid.com\/blog\/wp-content\/2009\/04\/2009-04-22_13-35-49-225x300.jpg 225w\" sizes=\"auto, (max-width: 266px) 100vw, 266px\" \/><\/a>Jetzt wird mit neuem Schwung die Verkaufssaison weitergef\u00fchrt &#8211; sie ist ja eigentlich nie zu Ende &#8211; denn es gilt eine wiederum gesteigerte Weinmenge (im Bild das wieder volle, inzwischen gek\u00fchlte Weinlager) an die Frau bzw. an den Mann zu bringen. 2007 wurden vom ersten Jahrgang 5.000 Flaschen gef\u00fcllt, 2008 schon 9.000 und heuer erfuhr die Produktion durch die Hinzunahme weiterer Fl\u00e4chen eine zus\u00e4tzliche Erh\u00f6hung: 13.000 Flaschen stehen f\u00fcr den genussvollen Konsum zu Verf\u00fcgung.<\/p>\n<p><em>Adesso tocca continuare la vendita, che in verit\u00e0 non si ferma mai, con nuovo slancio. Anche perch\u00e8 <\/em><em>\u00e8 da commercializzare <\/em><em>nuovamente una quantit\u00e0 maggiore di vino (nella foto il deposito refrigerato di nuovo riempito).
