Trauben wurden im Betrieb seit jeher produziert, aber erst 2006 wurde der erste zur Vermarktung bestimmte Wein produziert. <\/p>\n\n\n\n<p><em>Mentre altre aziende a causa della loro storia sono tentate a spacciare la mummia del Similaun, \u00d6tzi, come il loro primo enologo, noi siamo lontani da questa seduzione. Da sempre abbiamo prodotto uve ma soltanto dal 2006 viene prodotto vino destinato alla vendita.<\/em><\/p>\n\n\n\n<p>Aber jede Tradition muss einmal beginnen. Ein wichtiger Schritt dazu ist der Aufbau eines Weinarchivs. Wie legen von jedem Wein und Jahrgang immer ein bis zwei Kartone auf die Seite. So k\u00f6nnen wir auf Wunsch der Kunden Vertikalverkostungen anbieten und nat\u00fcrlich immer wieder auch selbst schauen, wie die Weine sich in der Zeit entwickeln. Einzelne Flaschen dieser \u00e4lteren Jahrg\u00e4nge verkaufen wir auch. Besonders Stammkunden sch\u00e4tzen dieses \u2013 nat\u00fcrlich begrenzte \u2013 Angebot. Auch auf Messen und Pr\u00e4sentationen weckt man Interesse, wenn man vom gleichen Wein nicht nur den aktuellen Jahrgang zeigen kann. Und wenn sich eine besondere Gesch\u00e4ftsbeziehung anbahnt, dann biete ich auch immer zus\u00e4tzlich etwas Reiferes an; der Kunde soll wissen, dass diese Weine jung getrunken werden k\u00f6nnen, aber nicht m\u00fcssen.<\/p>\n\n\n\n<p><em>Comunque ogni tradizione ha il suo punto di partenza. Un primo passo \u00e8 la creazione di un archivio dei vini. Da sempre abbiamo messo via uno o due cartoni di ogni annata per ogni vino. In questo modo possiamo offrire ai nostri clienti degustazioni verticali ma anche noi stessi siamo interessati a capire come evolvono i vini. Bottiglie singole sono destinate anche alla vendita. Soprattutto i clienti abituali apprezzano questa possibilit\u00e0, nonostante che sia ovviamente limitata. Anche alle fiere e presentazioni di altro tipo poter presentate annate oltre a quelle attuali suscita interesse.
