Nach der bew\u00e4hrten 300-Beeren-Methode haben Monika und ich in der jeweiligen Anlage einige zuf\u00e4llig verteilte Reihen durchschritten und, nat\u00fcrlich blind, drei Beeren pro Traube entnommen.<\/p>\n<p><em>Oggi, per i pi\u00f9 curiosi sicuramente tardi, ho campionato la prima volta i vigneti destinati alla produzione di vini rossi e rosati. Utilizzando il metodo provato dei 300 acini, Monika ed io abbiamo camminato per alcuni filari scelti a caso dove abbiamo prelevato, naturalmente alla cieca, tre acini per grappolo.<\/em><\/p>\n<p><em><!--more--><\/em><strong>Cabernet franc <em>Puit<\/em>:<\/strong> diese Partie geht zur G\u00e4nze an unsere Kellereigenossenschaft. Die Zuckerwerte von 18,9 \u00b0KMW sind jene, welche ich mir erwartet habe. Der Gesundheitszustand ist gut, etwas mehr Zucker kann mit fortschreitender Reife schon noch erwartet werden. Der Kellermeister meint, dass ihr Lesetermin in die \u00fcbern\u00e4chste Woche fallen wird.<\/p>\n<p><strong>Merlot <em>Kotzner<\/em>:<\/strong> Tiefschwarze Beeren von einer H\u00e4rte, welche fast f\u00fcr Dritte Z\u00e4hne gef\u00e4hrlich werden k\u00f6nnte. Dabei weisen sie schon einen Zuckergehalt von 19,3 \u00b0KMW auf. Das wird wieder so ein leichter Sommer-Kretzer werden! Die angestrebte Reife, bei der die f\u00fcr ihn typische Erd- und Himbeerfrucht hoffentlich wieder hervorkommt, wird so schnell nicht erreicht werden. Daumen mal ? d\u00fcrfte er ihn in zwei Wochen die Wimmscheren sp\u00fcren.<strong><br \/>\nMerlot <em>Klausner<\/em>:<\/strong> Die 18,7 \u00b0KMW scheinen f\u00fcr unsere Top-Merlot-Lage etwas wenig zu sein. Die Beeren schmecken aber viel reifer als jene des <em>Kotzners<\/em>, die Schale wirkt beim Kauen viel weniger adstringent. Der relativ niedere Zuckergehalt erlaubt es mir, sofern die Witterung mitspielt und der Gesundheitszustand es zulassen, ihn so sp\u00e4t wie m\u00f6glich zu lesen ohne auf zu hohe empfundene Alkoholwerte zu kommen. So k\u00f6nnen st\u00f6rende vegetale, an Paprika erinnernde Noten mit hoher Sicherheit vermieden werden.<br \/>\nIn einer Woche werden wir die Tests wiederholen.<\/p>\n<p><em><strong>Cabernet franc <\/strong><\/em><strong>Puit<\/strong><em><strong>:<\/strong><strong> <\/strong>Questo vigneto viene conferito totalmente alla nostra cantina cooperativa. La concentrazione zuccherina di 18,9 \u00b0Babo \u00e8 quella che mi aspettavo. Lo stato sanitario \u00e8 buono e la gradazione aumenter\u00e0 probabilmente ancora con un po&#8216;. L&#8217;enologo pensa di farle vendemmiare tra due settimane.<br \/>\n<strong>Merlot <\/strong><\/em><strong>Kotzner<\/strong><em><strong>:<\/strong> Acini nerissimi e di una durezza che potrebbe essere pericolosa per le dentiere, nonostante che hanno 19,3 \u00b0Babo. Daranno di nuovo <\/em><em> <\/em><em>origine ad <\/em><em>un <\/em><em>leggerissimo<\/em><em> rosato! La maturit\u00e0 che deve avere per poter dare origine agli odori desiderati di lampone e fragola fa ancora aspettare. Penso che verr\u00e0 vendemmiato anche questo non prima di due settimane.<strong><br \/>\n<\/strong><strong>Merlot <\/strong><\/em><strong>Klausner<\/strong><em><strong>: <\/strong>I<\/em><em> 18,7 \u00b0Babo sembrano poco per il vigneto di punta del Merlot. Gli acini hanno per\u00f2 un gusto molto pi\u00f9 maturo che non quelli del <\/em>Kotzner<em>, le bucce sono molto meno astringenti. La concentrazione zuccherina abbastanza modesta mi consente, condizioni meteorologiche e stato sanitario permettendo, vendemmiare queste uve il pi\u00f9 tardi possibile senza eccedere con i contenuti alcolici.
