Das Abtrennen von Trub durch die Sedimentation und dem nachfolgenden Abziehen des klareren \u00dcberstandes ist eine uralte Technik. Ganz fr\u00fcher, vor der Einf\u00fchrung von Filtern und Zentrifugen, wahrscheinlich die einzige Methode der Abtrennung, heute immer noch aktuell, auch wenn sie heute von zus\u00e4tzlichen Techniken flankiert wird.<\/p>\n<p><em>Il <\/em>travaso<em> \u00e8 sicuramente la tecnica enologica adottata pi\u00f9 frequentemente di tutte. La separazione della fase liquida da quella solida tramite sedimentazione e conseguente travaso del liquido sovrastante \u00e8 una tecnica antichissima. Nel passato era l&#8217;unico metodo di separazione, nonostante l&#8217;avvento della filtrazione e centrifugazione rimane un procedimento tuttora attuale.<\/em><\/p>\n<p><em><!--more--><\/em>Gestern sind ersten beiden Grauen-Burgunder-Weine von der Grobhefe abgezogen worden, nachdem diese seit kurzem trocken sind, d.h. den ganzen verg\u00e4rbaren Zucker in Alkohol umgewandelt haben. Auch die anderen beiden n\u00e4hern sich mehr oder weniger z\u00fcgig dem G\u00e4rende. Zu Beginn wird der Wein vom &#8222;oberen Patent&#8220; abgepumpt, wenn dort nichts mehr kommt, kann man das T\u00fcrl aufmachen und den Rest an Klarem absaugen. Das Ger\u00e4t, welches ich daf\u00fcr benutze, ist keine Neuerfindung. Mit dem Schlosser <a title=\"Fauri Maschinenbau\" href=\"http:\/\/www.faurisnc.it\/de\/einfuehrung-in-den-betrieb.html\" target=\"_blank\">Mauro Fauri<\/a> zusammen haben wir es aber weiterentwickelt, indem wir am Ende einen beweglichen Becher befestigten. Dieser bleibt immer waagrecht, sodass bis zuletzt die Trennung sauber und vollst\u00e4ndig erfolgt. Bei den zahlreichen Abz\u00fcgen, die jeder Wein vom Mostsstadium bis zur letzten Filtration unterzogen wird, wirklich n\u00fctzlich.<\/p>\n<p><em>Ieri sono stati travasati i primi due vini di Pinot grigio, dopo che sono andati a secco, cio\u00e8 hanno trasformato tutti gli zuccheri fermentescibili in alcol etilico. Anche gli altri due si avvicinano pi\u00f9 o meno spediti alla fine della fermentazione. All&#8217;inizio viene prelevato il vino dal rubinetto superiore, quando il livello scende al di sotto di quello si apre la portella per travasare il resto. L&#8217;attrezzo che utilizzo per ci\u00f2 non \u00e8 una nostra invenzione ma insieme al fabbro <a title=\"Costruzioni meccaniche Fauri\" href=\"http:\/\/www.faurisnc.it\/it\/introduzione-all-azienda.html\" target=\"_blank\">Mauro Fauri<\/a> l&#8217;abbiamo sviluppato ulteriormente applicando davanti una tazza movibile. Questa resta sempre orizzontale permettendo una separazione netta ed efficace fino alla fine.
