Non lo faccio certo per limitare la richiesta del mio Gew\u00fcrztraminer <\/em>Feld<em>.<\/em><\/p>\n<p><em><!--more--><\/em>Ich zeige diese Bilder um zum einen der andauernden Forderung nach <a title=\"SMG: Die neue Sehnsucht nach Authentizit\u00e4t\" href=\"http:\/\/www.smg.bz.it\/index.php?option=com_presse&amp;task=view&amp;cid=994&amp;Itemid=67&amp;lang=de\" target=\"_blank\">Authentizit\u00e4t<\/a> nachzukommen und gem\u00e4\u00df dem Blog-Untertitel &#8222;dem wein ganz nah<em>&#8222;<\/em> auch jene Aspekte der Weinherstellung zu zeigen, welche normalerweise nicht Eingang in Hochglanz-Brosch\u00fcren oder Designer-Webseiten finden und trotzdem zur Realit\u00e4t geh\u00f6ren. Inoltre voglio evidenziare che per certi vitigni e tipologie di vino le uve pi\u00f9 belle e sane non danno per forza il vino migliore.<\/em><\/p>\n<p><a href=\"http:\/\/www.kobler-margreid.com\/blog\/wp-content\/2009\/09\/2009-09-25_14-17-08a.jpg\" rel=\"lightbox[2823]\"><img loading=\"lazy\" decoding=\"async\" class=\"float left alignleft size-full wp-image-2837\" style=\"border: 0pt none; margin: 0px 5px;\" title=\"2009-09-25_14-17-08a\" src=\"http:\/\/www.kobler-margreid.com\/blog\/wp-content\/imagescaler\/89b54402e3cf844963be91e040a00cf3.jpg\" alt=\"2009-09-25_14-17-08a\" width=\"354\" height=\"265\" \/><\/a>Im meinem speziellen Fall sind die schwarzen Beeren jene, welche, von der direkten Sonne getroffen, in der Reifephase einen sogenannten Sonnenbrand erlitten haben und in der Folge teilweise oder komplett eingetrocknet sind. Das Absterben der Beerenh\u00e4ute hat den Wasserverlust m\u00f6glich gemacht und die Beeren auch schwarz gef\u00e4rbt.<\/p>\n<p><em>Nel mio caso gli acini neri sono quelli che, colpiti dal sole diretto, nella fase di maturazione hanno sofferto una scottatura e si sono seccati in parte o totalmente. La necrosi della buccia ha permesso la perdita d&#8217;acqua e ha conferito agli acini interessati il loro colore nero.<br \/>\n<\/em><\/p>\n<p>Nachdem ich mich schon in den vergangen Jahren davon \u00fcberzeugt habe, dass die betroffenen Beeeren nicht nur sehr s\u00fc\u00df sondern durch ihren Rosinengeschmack die Komplexit\u00e4t des sp\u00e4teren Weines steigern, werden diese Trauben bei der Weinbereitung nicht nur toleriert sondern sind bis zu einem gewissen Anteil sogar erw\u00fcnscht.
