Aber sich so lange Zeit lassen, wobei ich die fehlenden Hefen\u00e4hrstoffe auch mit G\u00e4rsalzen zu ersetzen versucht habe, so ein Verhalten war nicht vorhersehbar. 50 Tage Zeit hat sich Merlot Kretzer (im Bild beim gestrigen ersten Abzug) genommen. Auch hier niedrige HVS-Werte aber hinsichtlich der G\u00e4rdauer ein ansonsten unauff\u00e4lliger Hefestamm. Alle anderen Beh\u00e4lter fielen \u00fcber alle Sorten hinweg zum Gl\u00fcck\u00a0nicht auf, was die G\u00e4rdauer betrifft. Man sieht wieder einmal, dass man \u00fcber seine Bereitung auch viel wissen kann, der Wein macht schlussendlich doch fast immer, was er will.<\/p>\n<p><em>Certo, del lievito scelto si sa che fermenta sempre piuttosto lentuccio ed i contenuti in azoto assimilabile (APA) erano quest&#8217;anno dappertutto inspiegabilmente bassi. Per\u00f2 portare avanti la degradazione zuccherina con una velocit\u00e0 cos\u00ec lenta nonostante che ho cercato di compensare l&#8217;azoto carente con sali nutrienti era un comportamento non prevedibile. 50 giorni si \u00e8 preso il Merlot Kretzer (nell&#8217;immagine al momento del primo travaso ieri). Anche qui valori di APA bassissimi ma un ceppo di lievito non appariscente circa la velocit\u00e0 di fermentazione. Per fortuna tutti gli altri serbatoi indipendentemente dal vitigno hanno fermentato normalmente.
