Es wird n\u00e4mlich mit ziemlicher Sicherheit angenommen, dass der Graue Burgunder vom Blau- oder Sp\u00e4tburgunders abstammt, welcher wiederum dem Wei\u00dfburgunder generiert hat. Dies nicht durch nat\u00fcrliche oder vom Menschen angestellte Kreuzung, sondern durch spontane <a href=\"http:\/\/de.wikipedia.org\/wiki\/Mutation#cite_ref-0\" target=\"_blank\">Mutation<\/a>. Laut dem Herder Biologielexikon von 2004 ist <em>&#8222;Mutation w [von latein. mutatio = Ver\u00e4nderung; Verb mutieren], spontane, d.h. nat\u00fcrlich verursachte, oder durch Mutagene induzierte Ver\u00e4nderung des Erbguts (Ver\u00e4nderung der Basensequenz), die sich m\u00f6glicherweise ph\u00e4notypisch (Ph\u00e4notyp; z.B. in Form einer &#8222;Degeneration&#8220;) manifestiert.&#8220;<\/em><\/p>\n<p><em>La sequenza nel titolo non ha niente a vedere con una valutazione degli ononimi vini, ma si deve intendere come successione evolutiva dei vitigni citati. Infatti si presume con molta sicurezza che il Pinot grigio derivi dal Pinot nero e che abbia generato a sua volta il Pinot bianco. Questo non per incrocio naturale o favorito dall&#8217;uomo, ma per mutazione spontanea. Secondo <a href=\"http:\/\/it.wikipedia.org\/wiki\/Mutazione\">Wikipedia<\/a> la mutazione \u00e8: <\/em>&#8222;&#8230; ogni modificazione stabile nella sequenza nucleotidica di un genoma o pi\u00f9 generalmente di materiale genetico (sia DNA che RNA). Una mutazione modifica quindi il genotipo di un individuo e pu\u00f2 eventualmente modificarne il fenotipo a seconda delle sue caratteristiche e delle interazioni con l&#8217;ambiente.&#8220;<\/p>\n<p><!--more--><\/p>\n<p><em><\/em><a href=\"http:\/\/www.kobler-margreid.com\/blog\/wp-content\/2010\/08\/2010-08-26_15-32-58.jpg\" rel=\"lightbox[4465]\"><img loading=\"lazy\" decoding=\"async\" class=\"float left alignleft size-full wp-image-4485\" style=\"border: 0pt none; margin: 0px 5px;\" title=\"2010-08-26_15-32-58\" src=\"http:\/\/www.kobler-margreid.com\/blog\/wp-content\/2010\/08\/2010-08-26_15-32-58.jpg\" alt=\"\" width=\"250\" height=\"338\" srcset=\"https:\/\/www.kobler-margreid.com\/blog\/wp-content\/2010\/08\/2010-08-26_15-32-58.jpg 422w, https:\/\/www.kobler-margreid.com\/blog\/wp-content\/2010\/08\/2010-08-26_15-32-58-221x300.jpg 221w\" sizes=\"auto, (max-width: 250px) 100vw, 250px\" \/><\/a><\/p>\n<p>Beim Blauburgunder ist es mir nicht bekannt, aber im Falle des Grauen Burgunders wird einem dieser Hang zur Mutation, den die Pinot-Sorten innehaben, immer wieder aufgezeigt. Zumeist ganze Reben, aber auch Teile des Behanges, einzelne Beeren oder gar nur Beerenh\u00e4lften (!) werden zu Wei\u00dfburgunder. Auch wenn man beim Winterschnitt die mutierten Teile der Rebe in vielen F\u00e4llen wieder automatisch entfernt, steigt mit dem Alter der Grauburgunderanlage tendenziell der Wei\u00dfburgunderanteil, besonders wenn ganze Reben mutieren. So bald es dem Produzenten zu viel werden sollte, m\u00fcssen die Reben entweder gezielt geschnitten, ersetzt oder umveredelt werden. Diesen drastische Schritte sind aber selten erforderlich, da sich die Weine der beiden Sorten nicht extrem unterscheiden und die Mindestreinsortigkeit, wenn nicht restrikritiver angegeben, auf 85 % beschr\u00e4nkt. Deshalb werden in B\u00e4lde auch wieder Traubenfuhren auf den Stra\u00dfen ersichtlich sein, wo aus der Masse der gr\u00e4ulich-blauen auch immer wieder goldgelbe Trauben leuchten.<\/p>\n<p><em>Per il Pinot nero non conosco fatti simili, ma nel caso del Pinot grigio questa tendenza di mutare si fa sempre notare. Nella maggior parte intere viti, ma anche singoli grappoli o diversi acini dello stesso grappolo, perfino met\u00e0 dei singoli acini diventano Pinot bianco. Anche se con la potatura invernale si eliminano automaticamente gran parte dei tralci mutati, col passare degli anni la percentuale di Pinot bianco nel vigneto aumenta tendenzialmente, soprattutto se le mutazioni interessano interi ceppi. Se per il produttore la percentuale diventa troppa alta, le viti mutate devono essere potate appositamente, sostituite o nuovamente innestate. Questi procedimenti devono essere addottati per\u00f2 solo poche volte perch\u00e8 i vini dei due vitigni non si distinguono moltissimo e perch\u00e8 il disciplinare prevede spesso l&#8217;85 % come purezza minima.
