„Oft sind es nur einzelne Beere, welche von der F\u00e4ulnis angesteckt werden, oft aber auch halbe und ganze Trauben. Solche unreif gefaulten Beere bleiben sauer, und schaden nicht nur der G\u00fcte des Weines, sondern geben ihm auch einen unangenehmen widrigen Geschmack, oder machen ihn gar ungenie\u00dfbar, wenn viele solche Trauben unter die andre kommen.“<\/em>

Mit diesem immer noch g\u00fcltigem Zitat beginnt meine Diplomarbeit, welche ich 1990 an der Universit\u00e4t f\u00fcr Bodenkultur eingereicht habe. Seit der Besch\u00e4ftigung mit „Die quantitativen Ver\u00e4nderungen von Traubeninhaltsstoffen und die Aktivit\u00e4tsbestimmung des Enzyms Laccase bei klassifiziertem Botrytisbefall“ kultiviere ich zwangsl\u00e4ufig ein besonderes Verh\u00e4ltnis zu diesem Pilz. Wir wissen, dass je nach Sorte, Befallszeitpunkt, herbstlichem Witterungsverlauf und angestrebtem Weinstil dieser Pilz Segen oder Fluch bedeuten kann.<\/p>\n

„Unreif gefaulten Beere“ habe ich bei unserem zuletzt gelesenen Gew\u00fcrztraminer nicht gefunden. Der im Bild ersichtliche Botrytisbefall hat sich erst in den letzten Tagen danke der feuchten Witterung entwickelt ,weshalb man schon von einer beginnenden Edelf\u00e4ule sprechen kann. So etwas hatten wir noch nie, ich bin gespannt, wie sich diese etwas botrytisgepr\u00e4gte Teilmenge auf den Gesamt-Gew\u00fcrztraminer auswirken wird.<\/p>\n
