Die 3 \u00b0C Morgentemperatur haben das Abtrocknen der Trauben stark verz\u00f6gert, weshalb die Lese der ersten Gew\u00fcrztraminerpartie auf Sonntag verschoben wurde. Der Mosttemperaturrekord wurde noch einmal getoppt: 8,0 \u00b0C hatte die erste Lieferung, 14,3 \u00b0C aber schon jene, welche am sp\u00e4ten Vormittag geerntet wurde.<\/p>\n<p><!--more--><\/p>\n<p>[youtube width=&#8220;320&#8243; height=&#8220;265&#8243;]http:\/\/www.youtube.com\/watch?v=ymZNWSQLJ0A[\/youtube]<\/p>\n<p>Die Trauben pr\u00e4sentieren sich sch\u00f6n, die Anzahl der m.E. qualitativ wichtigen eingetrockneten Beeren h\u00e4lt sich aber leider in Grenzen. Deshalb auch die Entscheidung, eine H\u00e4lfte der Anlage erst in einer Woche oder mehr, je nach Witterung, zu ernten. Etwas mehr rosinenartige Beeren und ein Anflug von Edelf\u00e4ule t\u00e4ten dem angestrebten Weintyp sicherlich gut.<\/p>\n<p>[youtube width=&#8220;320&#8243; height=&#8220;265&#8243;]http:\/\/www.youtube.com\/watch?v=aeH3IKEW-jg[\/youtube]<\/p>\n<p>Die heute erfolgte Mostanalyse ergab: Mostgewicht 20,2 \u00b0KMW, pH 4,07, titriebare S\u00e4ure 3,7 g\/L, HVS 279 mg\/L. \u00c4hnliche Werte wie voriges Jahr, ich bin vorsichtig optimistisch. Nach erfolgter Pressung wurden die Trestern in Kisten gepackt und nach Arbeitsanleitungt beimpft, heuer soll erstmalig davon ein Destillat in der Lohnbrennerei von <a title=\"Unterortl Familie Aurich\" href=\"http:\/\/www.unterortl.it\/de\/brennerei\/?navid=5\" target=\"_blank\">Martin Aurich<\/a> hergestellt werden. Bin sehr auf das Resultat gespannt.<\/p>\n<p>[youtube width=&#8220;320&#8243; height=&#8220;265&#8243;]http:\/\/www.youtube.com\/watch?v=zO-ALXAEl1M[\/youtube]<\/p>\n<p>Am gleichen Tag wurden die vier Beh\u00e4lter Grauer Burgunder, welche am 19. und 20.9. vinifiziert wurden, erstmals von der Grobhefe abgezogen und in die nunmehr voll zu haltenden Tanks gepumpt. Gleichzeitig erfolgte die erste Jungweinschwefelung: 30 mg\/L sollen den ungewollten S\u00e4ureabbau verhindern, das G\u00e4rungsacetaldehyd abbinden und den Wein vor Oxidation sch\u00fctzen. Heute hingegen wird der am 22.9. gelesene Chardonnay dem ersten Abzug unterzogen.
