Nicht f\u00fcr die eigene Vinifikation aber f\u00fcr die <a href=\"http:\/\/www.kellerei-kurtatsch.it\/\" target=\"_blank\">Kellereigenossenschaft Kurtatsch<\/a>, welche etwas mehr als die H\u00e4lfte unserer Trauben bekommt. Gesunde Ware, kein Hagel, keine Botrytis, keine Essigf\u00e4ule aber geringe Ertr\u00e4ge, die ersten Tage waren entspanntes Lesen \u00a0bei sch\u00f6nem, oft aber unangenehm hei\u00dfem Wetter. Hinsichtlich den Traubenpartien, aus denen ich selbst Wein mache, habe ich es wie \u00fcblich nicht eilig und beschr\u00e4nke mich auf ein paar Reifetests, um die n\u00e4chste Woche, sollte das Wetter mitspielen, planen zu k\u00f6nnen. Die Ergebnisse waren durchaus \u00fcberraschend.<\/p>\n<p style=\"text-align: left;\"><em>Luned\u00ec scorso abbiamo iniziato con la vendemmia. Non per la propria vinificazione ma per la <a href=\"http:\/\/www.kellerei-kurtatsch.it\/\" target=\"_blank\">Cantina sociale di Cortaccia<\/a> che riceve un po&#8216; pi\u00f9 della met\u00e0 della mia produzione di uve. Un prodotto sano, senza grandine, senza botrite e marciume acido&#8230; i primi giorni erano una vendemmia relax con il tempo molto bello, troppo caldo per\u00f2 per chi ci lavorava. Circa le uve che trasformo io stesso come di consueto non ho molta fretta a vendemmiarle e non ho fatto altro che un test di maturazione per poter programmare, tempo permettendo, la settimana prossima. Die im Verh\u00e4ltnis dazu hohen S\u00e4urewerte sind aber wegen der doch noch hohen Anzahl an warmen N\u00e4chten unerwartet, durchaus aber sehr willkommen. Bessere Wirkung der schwefeligen S\u00e4ure, effektiverer Oxidationsschutz, tendentiell unproblematischere G\u00e4rungen, geringere Gefahr eines ungewollten biologischen S\u00e4ureabbaus, all das bewirken tiefere pH- und h\u00f6here Werte an titrierbare S\u00e4ure. Trotzdem bleibe ich mit etwaigen Weinqualit\u00e4tsvoraussagen wie immer vorsichtig. La sorpresa \u00e8 invece costituita da i valori acidici molto alti, soprattutto se si tiene presente l&#8217;alto numero di notti ancora relativamente calde. Valori bassi di pH e alti di acidit\u00e0 sono benvisti in quanto aumentano l&#8217;efficacia dell&#8217;anidride solforosa, migliorano la protezione antiossidativa, aumentano la sicureza in fermentazione alcolica e diminuiscono il pericolo di fermentazioni malolattiche indesiderate. Ci\u00f2 nonostante rimango cauto nella previsione della futura qualit\u00e0 dei vini. I valori da sogno sopracitati non comprendono infatti solo una minima parte delle centinaia di molecole che compongono l&#8217;uva e che interagendo tra di loro definiscono la futura qualit\u00e0. S\u00ec, partiamo in vantaggio ma non \u00e8 detto che vinceremo di sicuro la gara. (Ok, sono il solito guastafeste che non intravede in ogni anata quella del secolo).\u00a0<\/em><\/p>\n<p style=\"text-align: left;\">Jedenfalls strebe ich meinen tats\u00e4chlichen Erntebeginn f\u00fcr Mitte der n\u00e4chsten Woche an, wobei die traubengoldene Junganlage am Ogeaner als erste dran sein wird. In meiner Vorstellung folgt dann der Grauer Burgunder und am Ende der Woche die Chardonnay-Trauben der bestehenden Anlage. Mal sehen, ob dieser Plan sich umsetzen l\u00e4sst und sich im Nachhinein auch als erfolgreich herausstellen wird. In jedem Fall ist mir die sensorische Reife am wichtigsten, die Weine sollen auf bew\u00e4hrte Art und Weise die Sorte und die Lage widerspiegeln und auch gereift noch schmecken. Die Alkoholgehalte, sofern sensorisch nicht st\u00f6rend, d\u00fcrfen mich nur am Rande\u00a0interessieren.<\/p>\n<p style=\"text-align: left;\"><em>In ogni caso ho pianificato di cominciare la mia vera vendemmia la met\u00e0 della prossima settimana partendo con le uve dorate di Chardonnay del nuovo impianto (terzo anno) nel vigneto Ogeaner. Secondo i miei progetti seguir\u00e0 il Pinot grigio e alla fine della settimana lo Chardonnay del vecchio impianto. Vederemo se riuscir\u00f2 a concretizzare questa sequenza e se queste scelte saranno state quelle giuste. In ogni caso per me la maturazione sensoriale \u00e8 quella pi\u00f9 importante, i vini dovranno rispecchiare come finora il pi\u00f9 possibile la variet\u00e0 ed il sito e durare nel tempo.
