Naja, eigentlich hei\u00dft es ja &#8222;shaken, not stirred&#8220;, also genau umgekehrt wie bei mir.<\/p>\n<p><em>L&#8217;agente 007 al servizio segreto di Sua Maest\u00e0 non lavora ancora nella mia cantina, ma da quando ho cominciato a pensare su cosa scrivere in un post sull&#8217;affinamento <\/em>sur lies<em> tra svinatura e filtrazione mi sono sempre venute in mente queste parole famose, ripetute in ogni film di <a href=\"http:\/\/it.wikipedia.org\/wiki\/Film_di_James_Bond\" target=\"_blank\">James Bond<\/a>, quando questo chiede l&#8217;obbligatorio\u00a0<a href=\"http:\/\/it.wikipedia.org\/wiki\/Vesper_(cocktail)\" target=\"_blank\">Wodka-Martini<\/a>.<\/em><\/p>\n<p><em> <\/em><!--more-->In den Monaten zwischen Oktober und April bleiben unsere Wei\u00dfweine in Kontakt mit der Feinhefe. Dies, weil durch Erfahrungsberichte aber letztlich auch durch Forschungsarbeiten (<a href=\"http:\/\/www.schneider-oenologie.com\/html\/deutsch\/PDF\/Die_Hefe_nach_der_Gaerung-Feinhefe.pdf\">1<\/a>,\u00a0<a href=\"http:\/\/www.kobler-margreid.com\/download_blog\/obstbauweinbau_feinhefe_2000.pdf\">2<\/a>, <a href=\"http:\/\/www.brsquared.org\/wine\/Articles\/surlie\/surlie.htm\" target=\"_blank\">3<\/a>) erwiesen, die Hefezellen nach der G\u00e4rung (nach SCHNEIDER 2005) folgendes bewirken:<\/p>\n<div id=\"_mcePaste\">\n<ol>\n<li>Eine Abgabe S-haltiger Aminos\u00e4uren wie Glutathion an den Wein, die reduktiv wirken.<\/li>\n<li>Eine Zehrung des in den Wein eindringenden Sauerstoffs, woraus sich ein\u00a0weiterer, sehr starker Reduktionseffekt ergibt [und den notwendigen Gehalt an freier schwefeliger S\u00e4ure vermindert].<\/li>\n<li>Eine Autolyse der Hefe unter Abgabe von Mannoproteinen und Glucanen und Anreicherung\u00a0derselben im Wein. Sie sind f\u00fcr die Zunahme der Mundf\u00fclle verantwortlich und mindern den\u00a0Bentonitbedarf durch Stabilisierung traubenb\u00fcrtiger Eiwei\u00dfe.<\/li>\n<li>Die Adsorption von Gerbstoffen und Schwermetallen.<\/li>\n<li>Die Synthese fl\u00fcchtiger Schwefelverbindungen (B\u00f6ckser) durch die Hefe, welche durch eine\u00a0ad\u00e4quate Sauerstoffzufuhr beseitigt werden.<\/li>\n<\/ol>\n<\/div>\n<p><em>Nei mesi tra ottobe ed aprile lascio i miei vini bianchi a contatto con la feccia fine. Lo faccio perch\u00e9 esperienze ma anche risultati scientifici <\/em><em>(<a href=\"http:\/\/www.schneider-oenologie.com\/html\/deutsch\/PDF\/Die_Hefe_nach_der_Gaerung-Feinhefe.pdf\">1<\/a>,\u00a0<a href=\"http:\/\/www.kobler-margreid.com\/download_blog\/obstbauweinbau_feinhefe_2000.pdf\">2<\/a>,\u00a0<a href=\"http:\/\/www.brsquared.org\/wine\/Articles\/surlie\/surlie.htm\" target=\"_blank\">3<\/a>)<\/em><span style=\"font-style: normal;\"> <\/span><em>hanno dimostrato che le cellule dei lieviti dopo la fermentazione \u00a0provocano <\/em><em>(secondo\u00a0SCHNEIDER 2005) <\/em><em>le seguenti reazioni:<\/em><\/p>\n<ol>\n<li><em>La cessazione di aminoacidi contenenti zolfo come il glutatione che agiscono in modo riduttivo.<\/em><\/li>\n<li><em>Il consumo di ossigeno \u00a0che aumenta ulteriormente l&#8217;effetto riduttivo<\/em><em> [e che riduce il contenuto necessario di anidride solforosa libera].<\/em><\/li>\n<li><em>L&#8217;autolisi dei lieviti libera mannoproteine e glucani. Questi aumentano la pienezza in bocca e riducono il fabbisogno in bentonite.<\/em><\/li>\n<li><em>Assorbono polifenoli e metalli pesanti.<\/em><\/li>\n<li><em>La sintesi di composti solforati volatili (odore di riduzione pi\u00f9 o meno forte) che per\u00f2 possono venire allontanati con arieggiamenti opportuni.<\/em><\/li>\n<\/ol>\n<p>[youtube width=&#8220;370&#8243; height=&#8220;292&#8243;]http:\/\/www.youtube.com\/watch?v=jRxCzvn0dY4[\/youtube]Ich selbst f\u00fchre den ersten Abzug inzwischen so durch, dass ungef\u00e4hr ein Drittel der gesamten Hefe mit in den Jungwein genommen wird. Insofern ist meine Ausbaumethode etwas mehr als ein Ausbau auf der Feinhefe, aber noch nicht mit einer richtigen <em>sur-lies<\/em>-Methode zu vergleichen. Ich bin zudem in der gl\u00fccklichen Lage, dass wahrscheinlich auf Grund der Bodenverh\u00e4ltnisse und der daraus folgenden N\u00e4hrstoffversorgung der Reben meine Weine nur ganz selten zur B\u00f6ckserbildung neigen. Deshalb gen\u00fcgt es in der Regel, duch vierzehnt\u00e4giges R\u00fchren die Hefezellen in Schwebe zu halten und die Bildung eines gef\u00e4hrlichen kompakten Hefedepots zu vermeiden. Sollte ein Wein bei der sensorischen Kontrolle trotzdem zu einer f\u00fcr das\u00a0Ausbaustadium\u00a0\u00fcbertriebenen Reduktion neigen, wird er sogleich durch einen oder mehrere offenen Abz\u00fcge vom hefebedingtem Trub befreit. Sicherlich ist diese Ausbautechnik nicht <em>die<\/em> Ma\u00dfnahme, die ein gutes Produkt erm\u00f6glicht, aber wohl einer\u00a0jener\u00a0vielen Hebel, die zu bet\u00e4tigen sind, damit die Weine fruchtig, sauber, aber \u2014 was uns besonders wichtig erscheint\u00a0\u2014\u00a0reifef\u00e4hig werden.<\/p>\n<p><em><a href=\"http:\/\/www.kobler-margreid.com\/blog\/wp-content\/2011\/01\/2011-02-03_21-53-09.jpg\" rel=\"lightbox[831]\"><img loading=\"lazy\" decoding=\"async\" class=\"float left alignleft size-full wp-image-5724\" style=\"border: 0pt none; margin: 0px 3px;\" title=\"2011-02-03_21-53-09\" src=\"http:\/\/www.kobler-margreid.com\/blog\/wp-content\/2011\/01\/2011-02-03_21-53-09.jpg\" alt=\"\" width=\"368\" height=\"310\" \/><\/a><\/em><\/p>\n<p><em> <\/em><\/p>\n<p><em>Io pertanto pratico il primo travaso in modo che circa un terzo della feccia totale viene asportata nel vino. In questo modo pratico un <\/em><em>affinamento<\/em><em> che \u00e8 qualche cosa in pi\u00f9 di quello sulle fecce fini, ma che nello stesso tempo non \u00e8 ancora il metodo <\/em>sur lies<em>. Sono inoltre nella felice condizione che probabilmente grazie alle condizioni pedoclimatiche e di conseguenza allo stato nutrizionale delle mie viti i miei vini tendono raramente alla riduzione. Per questo normalmente basta tenere in sospensione <\/em><em>le fecce <\/em><em>con l&#8217;impiego dell&#8217;agitatore ogni due settimane circa \u00a0in modo da evitare la formazione di un pericoloso deposito compatto sul fondo. Se un vino nonostante ci\u00f2 dopo controllo organolettico tendesse alla riduzione esagerata per quel preciso momento di affinamento, il serbatoio in oggetto viene tempestivamente liberato dalla carica fecciosa travasandolo uno o pi\u00f9 volte all&#8217;aria.
