Technologie stecke. Meine <a title=\"about me\" href=\"http:\/\/www.kobler-margreid.com\/blog\/ueber_mich\/\" target=\"_blank\">berufliche Vergangenheit<\/a> als Weinforscher im Bereich Verfahrenstechnik deutet im ersten Moment durchaus darauf hin.<\/p>\n<p><em>Spesso le persone pensono che dietro ad un discreto\u00a0<a href=\"http:\/\/kobler-margreid.com\/blog\/\/download_blog\/merlot_kotzner_2006_sartore.jpg\" rel=\"lightbox[8912]\">successo<\/a> dei nostri vini ci stia tanto lavoro in cantina ed anche molta tecnologia. In effetti il mio passato da ricercatore enologico potrebbe portare a pensare ci\u00f2.<\/em><\/p>\n<p><!--more-->Aber gerade die jahrelange Auseinandersetzung mit den von uns entwickelten bzw. getesteten Verfahren hat uns immer wieder gezeigt, dass wenn die Traubenqualit\u00e4t ein gewisses Niveau erreicht hat, zus\u00e4tzliche Technologie zu keiner merkbaren <a href=\"http:\/\/www.kobler-margreid.com\/download_blog\/intervitis_maischegaerung_2004.pdf\" target=\"_blank\">Qualit\u00e4tsverbesserung<\/a> f\u00fchrt. Deshalb habe ich f\u00fcr mich f\u00fcr eine zeitgem\u00e4\u00dfe aber defensive \u00d6nologie entschieden, die Arbeit im Keller soll einzig dazu da sein, um das Qualit\u00e4tspotential der Trauben optimal auszudr\u00fccken.<\/p>\n<p><em>Per\u00f2 proprio il confronto durato anni con procedimenti da noi sviluppati e tecnologie testate ci ha dimostrato sempre pi\u00f9 frequentemente il fatto che se la qualit\u00e0 dell&#8217;uva ha raggiunto un certo livello, l&#8217;impiego di ulteriore tecnologia non apporta un <a href=\"http:\/\/kobler-margreid.com\/blog\/download_blog\/enologo_macerazione_2006.pdf\">miglioramento percepibile<\/a> delle caratteristiche sensoriali del vino. Per questo ho deciso di adottare un&#8217;enologia cautelativa, il lavoro in cantina deve solo servire a fare esprimere meglio il potenziale qualitativo dell&#8217;uva.\u00a0<\/em><\/p>\n<p><em><\/em><a href=\"http:\/\/www.kobler-margreid.com\/blog\/wp-content\/2012\/08\/rebschule_thaler_1.jpg\" rel=\"lightbox[8912]\"><img loading=\"lazy\" decoding=\"async\" class=\"float left alignleft  wp-image-8934\" style=\"border: 0px; margin: 0px;\" title=\"rebschule_thaler_1\" src=\"http:\/\/www.kobler-margreid.com\/blog\/wp-content\/2012\/08\/rebschule_thaler_1.jpg\" alt=\"\" width=\"346\" height=\"260\" srcset=\"https:\/\/www.kobler-margreid.com\/blog\/wp-content\/2012\/08\/rebschule_thaler_1.jpg 1204w, https:\/\/www.kobler-margreid.com\/blog\/wp-content\/2012\/08\/rebschule_thaler_1-300x225.jpg 300w, https:\/\/www.kobler-margreid.com\/blog\/wp-content\/2012\/08\/rebschule_thaler_1-1024x768.jpg 1024w\" sizes=\"auto, (max-width: 346px) 100vw, 346px\" \/><\/a>Damit die Qualit\u00e4t aus dem Weinbau auch stimmt, ist eine gute Basis vonn\u00f6ten, es braucht das geeignete Pflanzmaterial. Es m\u00fcssen die f\u00fcr den Standort und den Vorstellungen des sp\u00e4teren Weines geeigneten Sorte-Klon-Unterlage-Kombinationen ausgesetzt werden. Dabei ist nicht zuletzt der aufrichtige Rat des Rebschulers von gro\u00dfer Bedeutung. Der Jungrebenlieferant unseres Vertrauens ist die <a href=\"http:\/\/rebschule.it\" target=\"_blank\">Rebschule Thaler<\/a> aus Tramin. Hansj\u00f6rg Thaler hat uns immer mit erstklassigem Material versorgt, so stammt z.B. der <em>Gew\u00fcrztraminer Feld<\/em> von 2004 gepflanzten Reben der Klone 14 LB (eine Selektion des Versuchszentrums Laimburg) und 47 (aus dem Elsass), beide sind auf der Unterlage SO$ veredelt.<\/p>\n<p><em>Perch\u00e8 la qualit\u00e0 sia prodotta in vigneto ci vuole una buona base, cio\u00e8 barbatelle idonee. Bisogna piantare combinazioni tra vitigno, clone e portainnesto mirate all&#8217;ottenimento della tipologia voluta di vino. Non ultimo \u00e8 necessario il consiglio sincero del vivaista. Il nostro fornitore di barbatelle di fiducia \u00e8 il vivaio Thaler di Termeno. Hansj\u00f6rg Thaler ci ha sempre fornito materiale di prima qualit\u00e0. Il <\/em>Gew\u00fcrztraminer Feld<em> per esempio viene prodotto da dal clone 14 LB (selezionato dal Centro sperimentale Laimburg) e dal clone 47 (di origine alsaziano), ambedue innestati sul portainnesto SO4 e piantati nel 2004.<\/em><\/p>\n<p>Mit dem Aussetzen von weiteren <a href=\"http:\/\/www.kobler-margreid.com\/blog\/2009\/04\/17\/neuanlage-ogeaner-1-nuovo-impianto-ogeaner-1\/\" target=\"_blank\">Chardonnay-Reben am Ogeaner<\/a>\u00a0ist die Sortenbereinigungsarbeit\u00a0inzwischen einmal abgeschlossen. Kunde der Rebschule Thaler bleibe ich aber weiterhin, denn die bestehenden, immer wertvoller werdenden alten Perglanlagen wollen gepflegt sein. Immer wieder stirbt eine Rebe zwischendurch und will ersetzt werden. &#8222;Zohnluggete&#8220; Anlagen entsprechen gar nicht meinem Ideal.<\/p>\n<p><em>Col piantare di altre viti di\u00a0<a href=\"http:\/\/www.kobler-margreid.com\/blog\/2009\/04\/17\/neuanlage-ogeaner-1-nuovo-impianto-ogeaner-1\/\" target=\"_blank\">Chardonnay sull&#8217;Ogeaner<\/a>\u00a0i grandi lavori di risistemazione varietale sono intanto finiti. Rimango comunque cliente dei vivai Thaler in quanto i vigneti vecchi a pergola, che col passare degli anni anni diventano sempre pi\u00f9 preziosi, hanno bisogno di cura, ci sono sempre viti da rimpiazzare.
