Nicht nur wegen der bewegten Bilder, deren Qualit\u00e4t doch sehr zu w\u00fcnschen \u00fcbrig l\u00e4sst, sondern auch weil endlich auch die Kellerger\u00e4usche zum Leser des Blogs hin\u00fcberkommen.<\/p>\n<p>Als Pumpe sei es f\u00fcr Most und Wein als auch f\u00fcr Maische habe ich mich als ich den Keller 2006 einrichtete, f\u00fcr die <a title=\"Francesca Pompe Enologiche\" href=\"http:\/\/www.francescapompeenologiche.com\/eng\/home_f.html\" target=\"_blank\">Francesca F03<\/a> entschieden. Die Leistung ist elektronisch regelbar, sie arbeit auch deshalb recht schonend und sie ist leicht reinigbar. <!--more--><\/p>\n<p>Einzig die Ger\u00e4uschentwicklung ist \u00e4u\u00dfert gew\u00f6hnungsbed\u00fcrftig. Besonders wenn sich bei geringen Drehzahlen die Drehkolben (im Bild bei ge\u00f6ffnetem Geh\u00e4use) sich nur 19 mal oder wenig \u00f6fter in der Minute drehen, geht ein unverwechselbares nervendes St\u00f6hnen und Seufzen durch den Keller.<\/p>\n<p>[youtube width=&#8220;320&#8243; height=&#8220;265&#8243;]http:\/\/www.youtube.com\/watch?v=ZBSZWbhzEIs[\/youtube]So geschehen letztlich beim Abzug des Merlots von den Trestern. Nach zwei Wochen alkoholischer G\u00e4rung, diese Jahr bei einer H\u00f6chstemperatur von 25 \u00b0C und einer kurzen Nachmazeration bei 20 \u00b0C, galt es, den Jungwein m\u00f6glichst ohne Schalen und Kernen in einen anderen Tank zu bringen. Die Trestern selbst wurden danach nat\u00fcrlich von Hand aus dem G\u00e4rbeh\u00e4lter geholt und leicht abgepresst; aus diesen soll wie aus jenen des Gew\u00fcrztraminers ein Treterbrand destilliert werden.<\/p>\n<p>Obwohl ich den Presswein schlussendlich noch jedes Jahr vor der F\u00fcllung f\u00fcr das Endprodukt verwendet habe, baue ich ihn auch dieses Jahr separat aus. Er hat mit seinem gesteigerten Gerbstoffgehalt immer noch dem Ablaufwein gut getan, in dem er seine Struktur verst\u00e4rkt hat ohne ihm Bitterkeit oder Adstringenz zu verleihen, aber man wei\u00df ja nie, es k\u00f6nnte ja auch des Guten zuviel sein. Und in diesem Stadium schon eine endg\u00fcltige Assemblage zu wagen, ist zu riskant. Wein ist ein ausgesprochenes Jahrgangsprodukt und die Folgen vorschnellen Handelns tr\u00e4gt man ein ganzes Jahr lang. Bei Imageverlust auch l\u00e4nger.<\/p>\n<p>Damit beim Abzug mitschwimmnede Feststoffe zur\u00fcckgehalten und die bei jeder G\u00e4rung mehr oder weniger anfallende Reduktivt\u00f6ne von vorneherein neutralisiert werden, benutze ich einen gel\u00f6cherten Kupferkessel als Siebeinrichtung. Eine Woche lasse ich die so gewonnene Weine sich kl\u00e4ren.
