Und wenn man sich die lokalen Wetterprognosen f\u00fcr die n\u00e4chsten Tage anschaut, hat man sogleich begreifen m\u00fcssen, dass man ab jetzt nur mehr verlieren und nichts gewinnen konnte.<\/p>\n<p style=\"text-align: left;\"><em>Per parecchio tempo le nostre uve rosse hanno resistito alle ripetute piogge. Ma adesso erano arrivate al limite ed in qualche caso \u00e8 stato anche sorpassato.\u00a0E se si guardano le previsioni meteo dei prossimi giorni (<a href=\"http:\/\/www.kobler-margreid.com\/download_blog\/prognosi_meteo.jpg\" rel=\"lightbox[9293]\">versione italiana<\/a>) si capische subito che c&#8217;\u00e8 solo da perdere e non da guadagnare.<\/em><\/p>\n<p style=\"text-align: left;\"><a href=\"http:\/\/www.kobler-margreid.com\/blog\/wp-content\/2012\/10\/2012-10-11_13-36-27.jpg\" rel=\"lightbox[9293]\"><!--more--><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-9311\" style=\"border: 0px;\" title=\"IF\" src=\"http:\/\/www.kobler-margreid.com\/blog\/wp-content\/2012\/10\/2012-10-11_13-36-27.jpg\" alt=\"\" width=\"530\" height=\"398\" srcset=\"https:\/\/www.kobler-margreid.com\/blog\/wp-content\/2012\/10\/2012-10-11_13-36-27.jpg 912w, https:\/\/www.kobler-margreid.com\/blog\/wp-content\/2012\/10\/2012-10-11_13-36-27-300x225.jpg 300w\" sizes=\"auto, (max-width: 530px) 100vw, 530px\" \/><\/a><\/p>\n<p>Unsere drei Rote-Trauben-Partien, Merlot <em>Kotzner<\/em>, Merlot <em>Klausner<\/em> und der heuer dazugekommene Cabernet franc <em>Puit<\/em>\u00a0(im Bild) hatten wahrscheinlich die angestrebte Reife (Zuckergehalt, Geschmack, Schalenkonsistenz) schon erreicht, so dass au\u00dfer dem zeitlich geh\u00e4uften Arbeitsaufwand keine weiteren Nachteile anfielen. Am 8. Oktober haben wir die Trauben f\u00fcr den Merlot Kretzer gewimmt, am 11. den Cabernet franc und am 12. den Merlot f\u00fcr die Riserva. Auch die anderen Kellereien der Gegend haben an diesen Tagen alles noch Ausst\u00e4ndige schnell hereingeholt, sogar den sp\u00e4t reifenden Cabernet Sauvignon.<\/p>\n<p><em>Le nostre tre partite di rosso,\u00a0Merlot <\/em>Kotzner<em>, Merlot <\/em>Klausner<em> ed il \u00a0Cabernet franc <\/em>Puit<em>\u00a0che si aggiunge da quest&#8217;anno (foto sopra), avevano molto probabilmente gi\u00e0 raggiunto la maturazione perseguita (contenuto zuccherino, sapore, consistenza della buccia), per cui oltre al ritmo di lavoro pi\u00f9 serrato non si sono avverate altre complicazioni. L&#8217;8 ottobre abbiamo vendemmiato le uve destinate alla produzione del nostro Merlot rosato, l&#8217;11 il Cabernet franc ed il 12 il Merlot che diventer\u00e0 a suo tempo una riserva. Anche le altre cantine della zona hanno fatto vendemmiare tutto il rimanente, anche il molto tardivo Cabernet Sauvignon.<\/em><\/p>\n<p>Von der Verarbeitung des Merlot Kretzers habe ich ein paar kurze Filmaufnahmen gemacht: Abbeeren und Maischen, F\u00fcllen der Presse bei geschlossenen Ablaufkan\u00e4len, Entsaftung nach ca. 36 Stunden. In der ersten Aufnahme sind \u00fcbrigens Katarina und Vladimir zu sehen. Sie sind als Saisonsarbeitskr\u00e4fte seit \u00fcber f\u00fcnfzehn Jahre flei\u00dfige Helfer in der Laubarbeit und bei der Ernte.<\/p>\n<p><em>Della lavorazione del Merlot rosato ho fatto qualche filmino: Pigiadiraspatura, riempimento della pressa con canalette chiuse, sgrondatura dopo 36 ore di macerazione prefermentativa. Nel primo filmino si vedono tra l&#8217;altro Katarina e Vladimir.
